Four hours into the ride and you still want the next one. That doesn't happen with the gels you know. The texture doesn't crystallise, doesn't stick to your teeth, doesn't leave a syrupy aftertaste. When your head is already negotiating with your body on the climb, food that isn't another punishment makes the difference between finishing and not.
